How to clean a home espresso machine properly

Short answer: clean the parts that touch coffee and milk, not the parts that look dirty. After every drink, purge the group, wipe the screen, rinse the basket, and wipe and purge the steam wand immediately. Daily, backflush if your machine can, and wash the basket, portafilter and screen. Weekly, soak them. Descaling is a separate job.

Almost every home espresso complaint is one of two things: the coffee has quietly gone wrong and no grind adjustment fixes it, or the machine has developed a fault. Both are usually cleaning problems, and the reason people get cleaning wrong is that they clean what is visible. What matters is inside the group, behind the shower screen, inside the wand tip, and along the milk path.

What are you actually cleaning?

Three separate processes are at work, and treating them as one job is the root of most bad routines.

Coffee oils and fines. Every shot leaves oil and fine particles in the basket, on the portafilter, behind the shower screen, in the group's passages and around the gasket seating. Coffee oil oxidises: warm, wet and exposed to air it turns rancid, and rancid oil has a flat, ashy bitterness that transfers into the next shot. Fines lodge in the screen and make the flow into the puck uneven. This is the taste problem.

Milk protein and fat. Milk leaves protein and fat on any surface it touches and heat sets it — on the wand, in its internal channel, in the tubes and valves of an automatic milk system. That residue is a growth medium: it tastes bad, but it is really a food-safety problem, and it develops over hours rather than weeks.

Scale. Minerals in the water precipitate onto hot surfaces — boiler walls, elements, hot-water plumbing — insulating, restricting flow and eventually killing components. That is a machine-life problem, and cleaning does not address it: it belongs to descaling at home. So, plainly: a descaler does not clean coffee oils, and a coffee detergent does not remove scale. Different chemistries, different deposits.

What should you do after every drink?

The habit that does most of the work, and it takes seconds.

  • Purge the group briefly, clearing loose grounds from the screen before they dry on.
  • Wipe the screen with a cloth while the group is still wet.
  • Knock out and rinse the basket. Rinsed, not just knocked out — otherwise a film of oil builds in the perforations.
  • Wipe and purge the steam wand immediately. The step people skip, and the one with the shortest window. Milk dried onto a hot wand is far harder to remove than milk wiped off wet, and a wand with residue on and inside it is a hygiene problem within hours, not days. Damp cloth outside, then a short burst of steam to clear the internal channel and tip.

What does a daily clean involve?

At the end of a day's use: backflush with water where the machine supports it; wash the basket, portafilter and shower screen with a brush, working at the perforations rather than the visible surface; empty and rinse the drip tray; and clean the wand tip, checking the holes are clear.

What does backflushing physically do?

It reverses the flow through the brew group. A blind basket — one with no holes — goes in the portafilter, so water cannot go forward through the puck. Pressure builds instead, and when the pump stops the three-way solenoid valve opens and the pressurised water rushes backwards through the valve and out to the drain, taking accumulated oil and fines from the group's passages, the area behind the screen and the valve itself. With detergent added it dissolves those oils rather than displacing them.

Which machines cannot be backflushed?

Backflushing requires a three-way solenoid valve and the ability to take a blind basket. Without the valve there is nowhere for the pressurised water to go, and the attempt forces it back along paths never designed to carry it — toward the pump or the boiler, depending on the design.

Machines that generally cannot be backflushed include many single boiler designs without a solenoid, most lever machines, and various thermoblock designs; those that generally can include most heat exchanger and dual boiler machines with a commercial-style group. Generally is not a basis for action. Check the manual for your machine and do not assume from its category — some single boiler machines have three-way valves, and some you would expect to be backflushable are not. What belongs to a weekly clean?

Weekly is where the parts come apart.

  • A detergent backflush, where supported, following the detergent's own instructions.
  • Remove and soak the shower screen and dispersion block. The upper face of the screen and the underside of the block hold the worst of it, and neither is visible in use.
  • Clean the group gasket seating. Grounds pack into the groove the gasket sits in, and that is what eventually makes the portafilter seat badly and drip.
  • Soak baskets and the portafilter, basket-end down where the design allows, handle out of the liquid.
  • Strip and soak the steam wand tip. Most tips unscrew, and inside the tip is where set milk survives a wipe.
  • Clean the water tank. Empty, wash, dry — a tank that is only topped up develops a biofilm.

What needs doing monthly, or when a symptom appears?

Condition-based rather than calendar-based, which is the more useful way to think about it.

  • Replace the group gasket when it hardens or cracks, or when the portafilter starts sitting further round than it used to. That last symptom is the reliable one: as the gasket loses its give the portafilter travels further to seal, and eventually will not seal.
  • Check and replace the shower screen when the perforations are blocked, distorted, or no longer clean up in a soak.
  • Inspect and replace filter media where fitted, on the manufacturer's schedule.
  • Look at the drip tray drain and the internal drain box. This is where smell comes from, and it is rarely on anybody's list.

How does the routine differ by machine type?

The answers genuinely differ, and applying the wrong routine is how machines get damaged.

Single boiler with no three-way valve. Rinse and soak instead: flush hot water through the group, remove and wash the screen, soak baskets, portafilter and screen weekly. There is less internal group volume for oil to hide in, so that reaches most of what matters.

Heat exchanger with an E61-type group. Backflushable and worth doing. The group is a large mass of metal held permanently hot — what makes it thermally stable also gives coffee oil somewhere to accumulate — so the screen and dispersion block matter more here and should come off weekly. Dual boiler. As above, plus a dedicated steam circuit and wand.

Lever. Mechanism-specific, and generally not backflushable — there is no solenoid to backflush through. Clean group, screen and basket by hand, keep the gasket seating clear, wipe the group while still warm. Super-automatic. Cleaning is largely automated. Two things decide whether the machine stays good: the milk circuit and the brew unit. Run the cycles when the machine asks, not when it suits you — the prompt reflects use since the last one. Where the design allows, remove and rinse the brew unit as the manual directs.

What about milk systems?

A milk circuit — the tubes, valves and frothing assembly of an automatic milk system — is a food-contact path held at a temperature that suits bacteria and wetted with a protein-rich liquid. Its cleaning cycle is not optional and not deferrable.

  • Run the cleaning cycle at the end of every day of use. Not at the end of the week, and not when the machine becomes insistent.
  • Use the cleaner specified for the system. Milk-system cleaners are formulated for protein and fat; coffee detergents and household products are not.
  • Dismantle and hand-clean the removable parts on the interval the manual gives, and let them dry rather than reassembling wet.

What should you use, and what should you never use?

Use a detergent formulated for espresso equipment, follow its dilution, and rinse thoroughly — detergent residue is its own off-taste. For milk systems, the cleaner the manufacturer specifies. For scale, a descaler, and only for descaling.

Then the prohibitions, with reasons.

  • No dish soap in the group or on baskets. Its surfactants persist through rinsing, leaving a film on metal that taints shots, and the taint is stubborn once there.
  • No abrasives on screens or interiors. Scouring pads and metal wool scratch, and scratched surfaces hold residue better than smooth ones. Use brushes.
  • No descaler as a cleaner, and no cleaner as a descaler. The wrong chemistry attacks the machine's materials.
  • No portafilter in the dishwasher. Aggressive detergent and a hot cycle attack the finish and split the handle.
  • Nothing soaked that the manufacturer excludes — electrics, wiring, bearings, or plastic the manual says to keep dry. Wipe it instead.

How do you tell from the taste that a machine needs cleaning?

A dirty machine produces a recognisable set of faults, usually misdiagnosed as extraction problems.

  • Rancid, ashy or "old" bitterness with no relationship to grind changes. Finer or coarser moves other things around but never removes it.
  • A shot that tastes different from the first of the day — the first acceptable, later ones worse, as the group warms and its oils become more soluble.
  • A lingering, stale aftertaste that stays well after the cup.
  • Mouthfeel gone dull — weight and texture replaced by something thin and flat, with shot times unchanged.
  • A sour note on milk drinks, pointing at the wand or milk circuit rather than the group.

The rule: if grind and dose changes do nothing about a persistent off-taste, clean before you re-dial. What are the safety points?

Hot metal, hot water, a pressurised boiler and mains electricity, in one appliance. Switch off and let it cool before anything internal. Do not open a boiler that may be under pressure. Anything behind a panel goes to a technician.

Why a full clean is almost always cheaper than a new machine

Most home machines that stop performing have not been outgrown and were not badly made. They have been neglected, and cleaning is free.

A well-maintained modest machine outperforms a neglected expensive one by a wide margin: clean-tasting coffee and consistent flow depend more on the state of the group, the screen and the water path than on the specification of the machine those parts are fitted to. A dirty premium machine makes worse coffee than a clean simple one, and its owner usually concludes the machine is the problem — the commonest reason people decide to upgrade.

Nobody should act on that conclusion before doing a full clean, a descale, a new group gasket and a fresh screen. Those four cost very little, take an evening, and often the machine comes back.
