A flagship café is a strange commercial object. It has to run like a serious bar — real volumes, real service pressure — while functioning as the physical expression of a brand. For a coffee roaster, the brief is stricter still: everything in the room exists to present the coffee. The equipment has to perform at a professional level without turning the bar into a machinery showroom.
A specialty roaster in Bucharest faced exactly this brief when building its flagship location, and its equipment choices are a study in how that thinking works.
The machine as part of the room
For the counter, the roaster chose an Elektra — a brand that has built design-led espresso machines since 1947, where the machine is treated as a considered object in a room, not just an appliance on it. The choice did two jobs at once: a professional espresso platform for the bar, and a piece whose Italian design lineage matched the level of the room the roaster was building. The machine belongs in the flagship's photographs; it also pulls the shots all day.
The milk decision
Behind the espresso choice sat a quieter one. Milk service at flagship volumes is the classic bottleneck: it ties a skilled barista to the steam wand precisely when the roaster wants that person talking to guests about the coffee.
The bar added the HeyMilky induction milk system to carry milk preparation. Induction heats the milk as it flows through — no dilution from steam, a gentle temperature ramp that preserves the milk's proteins, nothing idling on standby. The baristas stay on extraction and on the floor; the milk arrives consistent, drink after drink.
One company behind the bar
There is a structural reason a roaster can specify this way. The espresso machine and the milk system come from one group — along with the spare parts, the technical documentation, and the service portal a technician orders from. For an operator whose flagship cannot afford a dead bar on a Saturday, who stands behind the equipment matters as much as what it does.
The flagship opened with the room in charge and the equipment doing its work — which was, after all, the brief.
